Homemade Soup Recipes – Lentil Soup

Lentil Soup

There is nothing better on a very cold New Years Day than homemade soup recipes. My lentil soup really hit the spot after taking our dogs for a long walk in the woods. The blue heron in the pond was none too happy with us for disturbing him, though.


  • 1 lb. sweet italian sausage
  • 2 tbsp butter
  • 1 small onion finely chopped
  • 6 cups chicken stock
  • 1 large clove of garlic
  • 3 large carrots
  • 8 oz. lentil beans, rinsed and drained
  • 1/2 tsp. thyme
  • 1/2 tsp. sage
  • 1/2 tsp. red pepper flakes
  • 1/2 tsp. black pepper
  • 8 oz. frozen chopped spinach


  1. Brown sausage.
  2. Sautee onion in butter in 5 qt. soup pot.
  3. Add sausage to onion in pot.
  4. Add chicken stock, spices, garlic, lentils and carrots.
  5. Bring to a boil.
  6. Add spinach and return to a boil.
  7. Let boil for a few minutes, stir, reduce heat and simmer for 1-2 hours or until lentils are soft and carrots are cooked through.
