Once again I have more Roma tomatoes then I know what to do with. What came to my mind? Chocolate. Chocolate always comes to my mind. I digress. Mmmmm……chocolate. Anyhow, salsa came to my husbands mind so I made up this easy and fresh tomato salsa recipe then grabbed a Hershey’s bar. Life is so good.
- 4 cups diced Roma tomatoes
- 1 large white onion – finely diced
- 2 jalapeno peppers- seeded, ribbed and finely diced. Leave ribs and seeds in for hot salsa
- 2 cloves garlic – minced
- 1 Tbsp sugar
- 2 limes – juiced
- 1/2 cup chopped Cilantro
- large pinch of salt
Mix all ingredients together in a large bowl and refrigerate overnight for the ingredients to marry.
Serve with tortilla chips or on top of crisp bread for a delicious bruschetta.
**This recipe makes 1 quart Mason jar full.**
