I have told you before that the way to a mans heart is through his stomach. Well, my son has the most beautiful and sweet hearted girlfriend who is cooking her way right into his heart. Thank you Rebekah Heafner for this wonderful easy Spinach Quiche recipe.
1. Mince 1/4 white onion & sauté until browned. Add 1/2 tsp. olive oil & 1 lb. fresh spinach to pan. Sauté until spinach is tender. Remove from heat & set aside.
2. Beat 3 eggs, 3/4 cup milk & 1 tsp. ground black pepper in bowl.
3. Add 1 cup cheese (I used an Italian blend of Asiago, mozzarella, provolone & Parmesan) to bowl and blend. Add spinach & 1 more cup cheese. Mix well.
4. Pour mixture into FROZEN pie shell. Use a pie shield or foil crust and bake @ 375° for 45-55 minutes or until browned.
